We know what Jesus said & did; yet Muslims don't for Muhammad! (Pt.1)

A little over a week before Christmas Adam Seeker asked Jay to come onto his YouTube show to explain how we know that Jesus is better attested historically than Muhammad.
This first episode looks at the fact that we know about what Jesus said and did because those who were the eyewitnesses wrote what they saw and heard almost immediately, and then made copies of what they wrote and sent them to the many churches in that time.
The same cannot be said for those who heard what Muhammad said or did, as we know of no-one who wrote even a word down from the thousands of people who supposedly heard him or saw him.
What's more, the Christian witnesses for Jesus used papyrus to write what they knew, which is the "Poor-man's Paper" because it was made from Papyrus leaves which disintegrate within 100 years, and that is why we don't have any originals today to look at.
The Muslims cannot make that excuse, since those who were eye-witnesses to what Muhammad said and did (the Sahaba, or his companions) would have been living in the caliphal courts, and so would not have used Papyrus, but would have had access to Parchments and Velum, which were made of animal skins, which didn't disintegrate, but could last for 1000s of years.
Yet, we have nothing from Islam in the 7th century concerning what Muhammad said or did, not one word.
