What did Jesus mean by "Son of man"?

Jesus referred to himself as "The Son of Man" many times in the Bible. This might not make a lot of sense to us because everybody's a son of a man, right? Some progressive Christian books even suggest that Jesus was emphasizing his humanity by using this title. As a Christian, it is crucial to be able to engage with that and clarify that no, that's it doesn't just mean son of a human, but it speaks to His deity.
